HACCP vs. preventive controls

HACCP organizes hazard control around critical control points. Preventive-controls requirements can also address sanitation, allergens, and supply-chain controls. Coverage depends on the product and operation; HARPC is common shorthand, not a separate certification.

TCS vs. RTE vs. NRTE

TCS identifies a need for time and temperature control. RTE describes food ready to eat without further safety preparation. NRTE requires further preparation for safety. A food can be both TCS and RTE.

CIP vs. COP vs. SIP

Clean-in-place treats installed equipment; clean-out-of-place treats removed parts. Sterilize-in-place is a separate processing objective. Cleaning, sanitizing, and sterilizing should never be treated as interchangeable claims.

ATP: hygiene or inventory?

Sanitation teams mean adenosine triphosphate and often read an instrument response in RLU. Planning teams mean available-to-promise stock. ATP hygiene screening does not identify a particular pathogen.

APC and AP: check the department

A laboratory APC is an aerobic plate count; a restaurant APC is average per cover. Recipe costing uses AP for as purchased; accounting uses AP for accounts payable. Always carry the context into a shared report.

ROP: packaging or purchasing?

Reduced oxygen packaging describes the package environment. Reorder point is an inventory trigger. MAP is one type of reduced-oxygen approach; none of these packaging labels establishes food safety by itself.

CTE, KDE, TLC and GTIN

A CTE is a traceability event. KDEs are its associated information. A TLC identifies a traceability lot. A GTIN identifies a trade item. A product identifier cannot replace all event and lot records.

QA vs. QC vs. COA

QA concerns the systems used to support consistent quality. QC concerns checks on products and processes. A COA reports selected analytical results; it is not a substitute for supplier qualification or hazard controls.

GFSI vs. SQF vs. FSSC

GFSI benchmarks certification programs. SQF and FSSC 22000 are certification programs with defined scopes. Check the relevant program version, certificate scope, issuing body, and current recognition.

ABV vs. ABW vs. IBU

ABV measures alcohol by volume; ABW measures it by mass. IBU describes an analytical bitterness measure. None of these values can be used as a direct substitute for the others.

BAM, FG, SPC and NFC

BAM can be a microbiology manual or an alcohol-labeling manual. FG can mean final gravity or finished goods; SPC can mean standard plate count or statistical process control. NFC can mean juice not from concentrate or contactless payment technology.

Food cost vs. labor vs. prime cost

Food cost percentage uses food cost and food sales. Labor cost percentage uses defined labor cost and associated sales. Prime cost combines COGS and labor. Align scopes and periods before adding or comparing percentages.
